摘要: 抗病毒类药物已被许多国家列为养殖业禁用药物,长期使用此类药物会造成药物残留、动物中毒、病毒变异等一系列问题,进而影响人类的身体健康。然而,到目前为止,我国尚未出台测定食品中抗病毒类药物残留的国家标准。本文综述了食品中抗病毒类药物残留的检测方法,主要有酶联免疫吸附测定法、色谱法、光谱法、电化学传感器、芯片法等,并分析了各方法的优缺点,以期对食品中抗病毒类药物残留的检测方法提供一定的理论依据。

Abstract: Antiviral drugs have been banned from being used in food-producing animals in many countries of the world. Long-term use of such drugs will cause a series of problems such as drug residues, animal poisoning and virus variation and, which will have a detrimental impact on human health. However, so far, the country has not yet promulgated a national standard for the determination of antiviral drug residues in foods. In this review, the major detection methods for antiviral drugs, including enzyme immunoassay, chromatography, spectroscopy, electrochemical sensor, and chip method are summarized and analyzed. We hope that this review will provide theoretical supports to promote the detection of antiviral drugs in foods.
