摘要: 本文运用电导法测定了38%(V/V)乙醇溶液中羟丙基-β-环糊精(HP-β-CD)对脂肪酸酯水解速率常数的影响,揭示了它们间的缔合行为,并建立了定量确定缔合常数(A)的方法,推导并验证了定量表达酯水解速率常数(k)与HP-β-CD浓度(M)关系的数学表达式:k=K′/(1+AM),得出了HP-β-CD对脂肪酸酯水解反应起禁阻作用的结论。

Abstract: We have studied how did 2-Hydroxypropyl β-Cyclodextrin (HP-β-CD) affect the hydrolysis rate constants(k) of fatty acid esters in 38%(V/V) Ethanol solution. The combination behavior between HP-β-CD and fatty acid esters has been discovered. And the way to determine the combination costant(A) between them quantificationally have also been found. In addition, the quantificational mathematic expression between hydrolysis rate constants(k) of ester and the concentration of HP- β-CD (M): k=k′/(1+AM) were deduced and validated. The result showed that HP-β-CD could inhibit the hydrolysis reaction of fatty acid ester.
