保加利亚乳杆菌胞外多糖合成及生物学特性研究

摘要: 影响保加利亚乳杆菌胞外多糖合成的因素较多,选取培养温度、pH、接种量及碳源作为影响的主要因素进行探讨,当乳杆菌的培养温度为40℃、pH值为6、接种量为2%、添加葡萄糖作为碳源时,能够得到得率较高的胞外多糖。该胞外多糖具有一定的生物学功能,灌胃小鼠胞外多糖能使小鼠具有较强活动耐力且耐缺氧,同时胞外多糖可以促进嗜酸乳杆菌的生长。

Abstract: Main factors affecting exo-polysaccharides(EPS) synthesis by Lactobacillus bulgaricus,such as culture temperature,pH,inoculation amount and carbon sources,were discussed. Higher yield of EPS can be achieved under the conditions of culture temperature 40 ℃,pH 6,inoculation amount 2% and glucose used as carbon source. The EPS has some biological functions,can endow mice with strong stamina and resistance to anoxia by gavage,and also can promote growth of Lactobacillus acidophilus.
