摘要: 本文介绍了微生物源低聚果糖合成酶的国内外研究和开发现状。根据国内外文献综述了微生物源低聚果糖合成酶的种类、理化性质、产酶条件、发酵方式及低聚果糖合成酶的分子生物学方面的研究进展。

关键词: 低聚果糖, 果糖基转移酶, &beta, -D-呋喃果糖苷酶

Abstract: In this article,the varieties,characters,production conditions,fermentation modes and some study advances in molecular biology about synthase of fructooligosaccharides from microoganism were summarized.
