水产动物胶原蛋白的研究现状及发展趋势

摘要:

胶原蛋白是生物体内一种重要的蛋白质,也是结缔组织的主要蛋白成分。目前至少已发现27 种不同的胶原类型。水产胶原蛋白由于其优良的理化性质和生理活性功能,已引起人们的广泛关注。本文简要综述水产动物胶原蛋白的研究进展、提取方法以及胶原蛋白在食品、生物医学等领域中的应用,并对今后的研究前景进行了展望。

Abstract:

Collagen is one of the predominant proteins in the living body, and the essential protein component in connective tissue. At least 27 different collagen types have been identified so far. Aquatic collagen has drawn extensive attention for its excellent physiochemical properties and physiologically active functions. In this review, we summarize the present advances in extraction methods and applications of aquatic collagen and make prospects for future research.
