太空搭载对大曲微生物区系的影响

摘要:

本实验研究了太空搭载前后微生物的区系的变化。结果表明,搭载后大曲中放线菌的数量大幅度下降;酵母菌、醋酸菌和乳酸菌数量减少;曲霉属数量增加较多。这些变化对食醋的无盐固形物的形成十分有利,可以大幅度地提高酿造产品的质量。

Abstract:

The changes of microbial flora in Daqu after spaceship carrying were studied. Results showed that Actinomyces number decreases significantly, and acetic acid bacteria, yeast and Lactobacillus decrease a little after spaceship carrying, but Aspergillus number is more than before. These changes are very beneficial to the formation of salt-free solids and quality improvement α of brewing products.
