摘要: 本实验主要研究了以反胶束体系CAB/正庚烷/正己醇萃取大豆蛋白的后萃过程,并分析了各因素对蛋白质后萃率的影响,通过响应面试验得到了CAB/正庚烷/正己醇反胶束体系萃取全脂大豆粉中蛋白质最佳的后萃工艺条件。

Abstract:  Backward extraction of soybean protein by CAB/n-heptane/hexanol reverse micellar system from full-fat soybean powder was studied. The effects of three factors were investigated by the response surface method (RSM). The best technics of backward extraction was obtained.
