津晋豫鲁部分地区原料奶中微生物污染情况调查

摘要: 蜡样芽孢杆菌是影响原料奶质量的致病微生物之一,它能产生致吐肠毒素和致腹泻毒素。由蜡样芽孢杆菌引起的食物中毒事件屡见不鲜,严重影响到消费者的身体健康。本研究对国内津、晋、豫及鲁四个地区的原料奶中微生物污染情况进行调查与鉴定,主要检测菌落总数和蜡样芽孢杆菌数。结果表明,原料奶市场的微生物污染状况不容乐观。本实验也对原料奶的溯源奠定了基础。

Abstract: Bacillus cereus is one of the microbes which affect the quality of the raw milk.It can produce enterotoxins which cause vomiting or Diarrhea.Food poisoning which caused by Bacillus cereus happened often.Enterotoxin is harmful to the human body.We investigate microbiology pollution of the raw milk come from four cities in this research.Especially aerobic bacterial count and Bacillus cereus count were detected.The results indicated that the microbial contamination condition in raw milk is unoptimistic.At the same time,the research laid a foundation for traceability of the raw milk.
