脱胶莼菜嫩叶生物大分子中锌的分布研究

Study on Distribution of Zinc in Biomacromolecules in Degummed Young Leaves of Water Shield

摘要: 本实验利用微波消解-火焰原子吸收分光光度法研究了脱胶莼菜嫩叶生物大分子中锌元素的分布情况。结果表明:脱胶莼菜嫩叶大分子中锌的浓度大小依次为:蛋白质>多糖>其它有机态物质;多糖中锌的分布比例大小依次为:水溶性多糖(WSP)>碱溶性多糖>酸溶性多糖;在水溶性多糖中的三个组分中锌的分配比例大小依次为:WSPⅠ>WSPⅢ>WSPⅡ;蛋白质中锌的分配比例大小依次为:弱碱溶蛋白(WP)>水溶蛋白>盐溶蛋白>弱酸溶蛋白;水溶性蛋白质中的五个组分中锌的分配比例大小依次为:WPⅣ>WPⅤ>WPⅡ>WPⅢ>WPⅠ。

Abstract: The distribution orderliness of zinc in biomacromolecules in degummed young leaves of water shield (Brasenia schrebei) was studied by microwave digesting-flame atomic absorption spectrophotometry. The results indicated that the rank of zinc concentration in biomacromolecules in degummed young leaves of water shield is protein>polysaccharide >other organic matters; The rank of zinc concentration in polysaccharide is water-soluble polysaccharide > alkali-soluble polysaccharide > acid-soluble polysaccharide; For three constituents of water-solubility polysaccharide, the distribution ratio rank of zinc is WSPⅠ > WSP Ⅲ> WSPⅡ; For protein, the distribution ratio rank of zinc is weak alkali-soluble protein > water-soluble protein> salt-soluble protein> weak acid-soluble protein; For five constituents of water-soluble protein, the distribution ratio rank of zinc is WP Ⅳ>WP Ⅴ>WP Ⅱ>WP Ⅲ>WP Ⅰ.
