食品中乙基麦芽酚快速测定方法研究

摘要: 基于三价铁与乙基麦芽酚反应生成紫红色配合物,建立了快速测定食品中乙基麦芽酚含量的新方法。该法具有简便、快速、灵敏的特点,且选择性较好,适用于咖啡梅和糖果等食品中乙基麦芽酚的测定。测定结果与紫外光度法一致,平均回收率为94.9%。

Abstract: A method for determanation of ethylmaltol in food was proposed based on the reaction of iron(Ⅲ) and ethyl maltol. The results confirmed that this method is convenient, fast and sensitive, so it can be used for fast detection of ethylmaltol in food ,such as coffee plum, candy and so on. The determination result is accordant to that of UV-spectrophotometry, the recovery rate reaches 94.9%.
