摘要: 漆酶是含铜的多酚氧化酶,用途广泛。本文主要阐述它在食品工业中的应用及其安全性,并介绍目前对其产生菌、菌种筛选、酶的诱导、抑制因素等方面的研究。

Abstract: Laccase is a kind of Cu-contained polyphenol oxidase. It was applied in many area.In this article,we primarily disscuse its application and safety in the food , study its inducer and inhibitor and screen the fungi that secrete laccase.
