摘要: 本文综述了不同食品种类中的主要不安全成分,包装和加工对食品安全的影响,食品安全研究和开发的重点,并以英国为例介绍了食品安全的立法情况。

Abstract: The principal contaminants in various kinds of foodstuffs, influence of packaging and processing on food safety, highlights of research and development in food safety, and related legislation were reviewed.
