摘要: 本文概述了酶解玉米蛋白制备生物活性多肽的现状及趋势,并提出了利用玉米蛋白制备生物活性多肽需要进一步探究的几个问题以及它的开发潜能。

Abstract: This paper gives a general description of present status and tendency about preparing bioactive peptides byenzymolysising corn gluten meal. Several problems needing further research is also suggested and analyzed, and itsexploiting potential.
