摘要: 测定了菜蕨不同发育阶段不同部位硝酸盐、亚硝酸盐和维生素C的含量。结果表明:菜蕨的硝酸盐含量很低、亚硝酸盐含量较抵,符合我国无公害蔬菜限量标准,维生素C含量又较为丰富,为品质上乘的野菜。

Abstract: The contents of nitrate, nitrite and vitamin C in edible parts of Callipters esculenta (Retz.) J. Sm. ex Moore et Houlst.was determined. The results indicate that it have good quality because of lower content of nitrate and nitrite, and medium contentof VC.
