玉米醇溶蛋白对乙醇吸收作用研究

摘要: 研究玉米醇溶蛋白对乙醇的吸收作用。采用有机溶剂法提取玉米醇溶蛋白,用酒精密度计检测乙醇溶液吸收前后乙醇浓度的变化,并通过单因素分析方法,研究吸收时间、固液比、乙醇浓度、溶液pH值及温度对乙醇吸收的影响,优化吸收条件。结果表明:在20℃,pH6的条件下,玉米醇溶蛋白以1:10的固液比,在30%的乙醇溶液中1h,有最大吸收量0.8ml/g(乙醇体积/玉米醇溶蛋白质量)。表明玉米醇溶蛋白具有较好的乙醇吸收作用,可用于酒类饮料中乙醇的吸收解酒剂。

Abstract: Zein was prepared by organic solvent extraction.The change of ethanol concentration was measured by alcoholmeter before and after absorption of zein.The single factor analysis was adapted to determining the optiomal conditions such as pH,temperature,ethanol concentration and ratio of liquid to solid.The results showed that there is the maximum ethanol adsorption under the conditions of ethanol concentration 30%,ratio of liquid to solid 1:10,20 ℃ and pH 6.The results lay a foundation for using zein to reduce alcohol concentration.
