浅析HACCP系统在餐饮业的应用

摘要: 食品的安全性正受到世界范围的广泛关注,危害分析关键控制点系统(HACCP)是近年来逐步应用于食品生产过程中的食品安全控制系统。在各类由于食品污染引起的食源性疾病中,60%发生于餐饮企业。若在餐饮业中实施HACCP系统,将有助于帮助人们获得安全的食品。本文根据中餐烹调工艺的特点,简要分析餐饮业如何实施HACCP系统。

Abstract: Food safety is paid more attentions in the world wide, Hazard Analysis Critical Control Point System(HACCP)has gradually applied in food-making process as controlling system of food safety recently. In the every variety foodbornedisease because of food polluted, 60% the occurrence happened in restaurant industry. If HACCP system is practiced inrestaurant industry , it will be benefit to food safety. Taking the characters of Chinese food into consideration, the paperanalyzes how to applicate HACCP system in restaurant industry.
