富硒香菇功能性奶粉的研制

摘要: 采用香菇深层发酵对无机元素硒进行富集和转化,获得了硒含量225μg/g的香菇菌丝体。富硒香菇菌丝体不但强化了硒营养,将无机硒转化为吸收和利用率较高的有机硒,而且,各种氨基酸含量大幅度提高,强化了营养价值。以富硒香菇菌丝体作基料配制的功能性奶粉除含有普通奶粉的营养成分外,还含有丰富的香菇多糖和有机硒,具有特殊的保健功能,是一种理想的功能性食品。

Abstract: Selenium was enriched and bio -converted by Lentinus edodes mycelia by means of submerged fermentation The content of Selenmm was enriched to 225μg /g.The existing state of Selenium w as con- verted from inorganic substance to o rganic substance,and the content of amino acid was high er than that of contrast.The powdered milk made f rom Se -enriched Lentinusedodes mycelia was rich in nutrition and became a functional food because of i ts high content of Selenium and polysaccharide.
