摘要: 研究了以海鳗为原料制作海鳗软罐头的工艺流程。重点对海鳗软罐头杀菌和贮藏时的抗氧化进行了探讨。

Abstract: The processing technique of conger pike pouch made from conger pike was studied.The anti-oxidation effects of conger pike pouch affter sterilization and storaqe were discussed in detail.
