文献掺含氮化合物食品中蛋白质的检验与测定

摘要: 探讨了在奶粉、豆奶粉、鱼粉中人为掺入尿素、硫酸铵等含氮化合物对蛋白质测定的影响;实验证明;用95%乙醇能很好地将尿素与食品中蛋白质进行分离,回收率较高,并能方便、快速测定掺入量。

Abstract: The effects of urea and ammonium sulfate adulterated to milk powder, bean-milk powder and fish meal respectively on the examination and determination of protein in food were described. Urea was perfectly separated from adulterated milk powder. bean-milk powder, tlsh meal with urea by 95% alcohol The additive amount can be determined conveniently and quickly. with a higher rate of recovery.
