黑豚肌肉的MfATP酶活性在冷藏条件下的研究

摘要: 测定冰藏条件和冷藏条件下黑豚肌肉的肌原纤维(MF)ATPase活性,并以此考察黑豚肌肉蛋白质变性情况,实验结果表明:黑豚肌肉在0℃冷藏和-10℃冻藏时间越长,MfATPase活性下降越多,蛋白质变性越严重;0℃冷藏比-10℃冻藏时的MfATPase活性下降快:Ca2+-ATPase活性是测定肌原纤维蛋白质变性的理想而又灵敏的指标。

Abstract: The myofibrillar adenosine triphosophotase activity of black guinea-pig muscle was measured duringrefrigeration and freezing storage.The experiment result showed:The longer muscle was stored at 0℃ and - 10℃,Thelower ATPase activity was the protein denatures more serious.Myollbrillar ATPase activity was the protein denarturesmore serious:Myofibrillar ATPase aceivity declined more rapidly when muscle was stored at 0℃ than - 10℃;CaATPase activity was an ideal and sensitive index measureing the change function of mtbfibrillar ATPase.
