中国鲢鱼营养成分的研究

摘要: 采用气相色谱法测定鲢鱼肉中EPA和DHA含量,并用氨基酸自动分析仪和原子吸收分光光度计分别测定各种氨基酸含量和部分微量元素。结果证实,鲢鱼是一种富含EPA和DHA的淡水鱼,并含有丰富的氨基酸和人体必需微量元素。提示鲢鱼是一种高营养价值的食品。

Abstract: EPA and DHA contents in silver carp were determined by gas chromatography. All kinds of amino acids and some trace elements in it were quantitative analysis by amino acid analyser and atoic absorption spectrophotometer respectively. The results proved that there were rich EPA, DHA, amino acids and essential trace elements in silver carp. Silver carp was a kind of high nutritive fare.
