摘要: 采用复合酶制剂对青藏高原油菜蜂花粉进行破壁处理,效果颇佳。方法具有作用时间短(12h左右),破壁率高(≥90%)等优点。破壁后花粉内含营养物质释放充分,各项感官指标明显改善。

Abstract: The process for breaking Qinghai-Xizang plateau rape seed bee pollen’s, wall with complex cellulase hydrolysiswas introduced. Besides the merits of short acting time (10~12 hours),high rate of broking wall (≥90%),the processingcould also improve broken wall bee pollens flavor and sensory quality.
