摘要: 本文研究了碱性蛋白酶水解玉米醇溶蛋白时, pH、温度、玉米醇溶蛋白浓度及酶浓度对蛋白水解量的影响,得到了实验范围内的最佳工艺条件。

Abstract: when corn prolamine was hydrolyzed with an alkaline protease,the effects of pH、 temperature corn prolamine concentration and enzyme concentration on protease hydrdysis were studied.The optimum technique conditions were obtained in this test.
