Hazard and Control of Bacterial Biofilm in the Meat Industry

摘要: 细菌生物被膜是细菌为适应自然环境有利于生存的一种生命现象,由微生物及其分泌物积聚而形成。形成生物被膜的细菌具有极强的抗药性、抗吞噬及抗趋化作用,对肉制品加工业的危害极大,可使微生物残存增加,普通的清洗和消毒无法达到除菌的效果。本文主要阐述细菌生物被膜的形成过程及特点,重点阐述其对肉制品行业的危害和控制方法。

Abstract: Bacterial biofilm is a biological phenomenon, in which bacteria adapt themselves to the natural environment for survival purposes. It is formed by the accumulation of microorganisms and their secretion. Biofilm-forming bacteria, which have very strong antibiotic, anti-phagocytic and anti-chemotactic activities, pose a huge hazard for the meat industry. Bacterial biofilm can cause an increase in the residual population of bacteria and residual bacteria cannot be eliminated by ordinary cleaning and disinfection. This paper focuses on the formation and characteristics of bacterial biofilm and its hazards for the meat industry and control measures.
