摘要: 果蔬产品电学特性及影响因素的研究,对于了解其加热特性、估算电磁场加热效率、设计加热和检测设备、消除测试干扰因素有重要意义。概述果蔬电学特性基本原理及测试技术,总结内因如果蔬成分、结构、温度、含水率和外因如测试频率等对果蔬电学特性的影响。

Abstract: Electrical properties and influencing factors are important to the understanding of heating behaviors, heating efficiency, heating and testing equipment design and influencing factor elimination for fruits and vegetables. In this paper, the principle and testing techniques of electrical properties for fruits and vegetables are described. Meanwhile, the influencing factors including compositions, structures, temperature and water content of fruits and vegetables as well as testing frequency are summarized.
