摘要: 生物胺广泛存在于各类食品中,由于其潜在毒性而产生的食品安全问题引起越来越广泛的重视。本文对生物胺的结构、基本性质和毒性作用作一全面性综述,并从食品质量安全角度出发,详述生物胺作为风险因子,在国内外的食品安全通报、法规限量及风险评估等方面的研究情况。

Abstract: Biogenic amines have been attracting widely attention due to the potential toxicity of biogenic amines present in various kinds of foods. This review summarized the structure, general characteristics and toxicological effects of biogenic amines. And researches of safety announcements, the legal limits and risk assessments were also reviewed with regard to biogenic amine as one of the risk factors of food quality and security.
