Research of Dairy Products Quality Based on Unilateral Nuclear Magnetic Resonance Technology

摘要: 运用单边全开放式核磁共振技术对常见掺假牛乳进行快速检测,并对市售盒装酸奶的货架期进行跟踪监测。在非均匀磁场下采用SGSE-CPMG(static gradient spin echo Carr-Purcell-Meiboom-Gill)序列测量各个样品的横向弛豫时间(记为T2′),经弛豫校正可得到测试样品的横向弛豫时间T2。研究表明,不同掺假比例样品其横向弛豫率呈一定规律分布,盒装酸奶样品T2峰位的变化可间接反应其新鲜度。运用单边核磁共振技术可实现乳制品品质的快速无损检测,被测样品无需复杂预处理,其系统硬件结构简单可便携(或安装)至现场进行实时检测。

Abstract: Unilateral fully-opened nuclear magnetic resonance was used to detect of adulterated milk and yogurt shelf life. Under the non-uniform magnetic field SGSE-CPMG (static gradient spin echo Carr-Purcell-Meiboom-Gill) sequence was used to measure the transverse relaxation time (T2′) of each sample. Then after relaxation correction the transverse relaxation time T2 was known. Research showed that the distribution of transverse relaxation rate of different adulteration was certain rule and that T2 peaks of yogurt sample of different storage time can response to its freshness indirectly. Using unilateral NMR technology can realize fast nondestructive testing of dairy products quality, tested samples without complex pretreatment, the system hardware structure is simple,can be portable(or installed on site) and can realize real-time detection.
