摘要： 从不同来源的2 种野生蜂蜜中筛选出一株产广谱抗菌活性物质的芽孢杆菌LZ-5，其发酵产物对短小芽孢杆菌、金黄色葡萄球菌、酿酒酵母及米曲霉等多种食品腐败微生物均有抑制作用。通过形态观察、生理生化实验、16S rDNA分析等手段初步确定LZ-5在细菌发育分类学上属于淀粉液化芽孢杆菌。利用有机溶剂萃取、SephdexLH-20凝胶柱层析、高效液相色谱等方法对其发酵产物中对酵母菌有抑菌活性的物质进行分离纯化，利用液相色谱-质谱法测定分子质量，并与标准品进行比较，初步确定该物质为iturinA2、iturinA3和iturinA6的混合物。

Abstract: One strain of Bacillus amyloliquefacien named LZ-5 was isolated from two wild honey samples collected from different regions. It was found to possess a broad spectrum of antimicrobial activity. Its secondary metabolites had strong antimicrobial activities against some kinds of food spoilage microorganisms, including Bacillus pumilus, Staphyloccocus aureus, Saccharomyces cerevisiae and Aspergillus oryzae. According to its morphological and cultural characteristics, physiological and biochemical properties and 16S rDNA sequence analysis, the strain was identified as Bacillus amyloliquefacien. The main anti-yeast substances produced by it were separated by organic solvent extraction, SephadexLH-20 column chromatography and high performance liquid chromatography. Liquid chromatography-electrospray ionization mass spectrometry was adopted to determine the molecular masses of the substances by comparison with standard compounds. The anti-yeast substances were preliminarily identified as a mixture of iturinA2, iturinA3 and iturinA6.
