摘要: 重金属污染是引起人们关注的食品安全热点问题之一。本文在分析食品中汞、砷、镉和铅等重金属的污染来源、存在形态及对人类产生的危害和清除污染食品中重金属方法的基础上,重点归纳了利用乳酸菌清除食品中重金属的菌株种类、清除作用机制及其在食品领域中应用研究的最新进展,为利用乳酸菌生物制剂清除食品中重金属的研究与应用提供借鉴与参考。

Abstract: Heavy metal pollution is one of the hot topics in food safety, which has become a problem of increasing concern. The sources of heavy metal pollutants such as mercury, arsenic, cadmium and lead in foods and their chemical forms and harms to human beings, as well as removal methods are discussed in this article. Meanwhile, we review recent progress in the discovery of lactic acid bacterial species able to remove heavy metals from foods and the underlying mechanism as well as their applications in the food field, which will provide references and guidance for the removal of heavy metals from foods using lactic acid bacteria biosorption.
