摘要: 宏基因组学是一种免培养,能够直接从环境中提取全部微生物基因组DNA,通过构建宏基因组文库并适当筛选,得到目的基因及生物活化物质的新型研究方法,它可以最大限度地挖掘微生物资源,现在愈渐成为微生物研究和开发最重要的课题之一。本文综述了宏基因组学的研究方法及其近几年来在食品科学领域的应用,着重介绍其在酶制剂开发、食品安全卫生、食品发酵群落、生态演化,食品营养和发现新型物质等领域的应用。同时探讨宏基因组学在食品科学领域未来的应用前景。

Abstract: Metagenomics is an advanced methodology by means of extracting all microbialgenomic DNAs in certain environmental habitat, constructing and screening metagenomic libraries to seek novel functional genes and biologically active compounds without cultivating. It can mine microbial resources to the greatest extent. Therefore, it is increasingly becoming one of the most important subjects in microbiological research and development. This paper reviews the recent research progress of metagenomics and its applications in the area of food science, especially in enzyme preparation development, food safety and hygiene, food fermentation, ecological evolution, food nutrition, and the discovery of new compounds, and explores its future prospects in the area of food science.
