‘霞多丽’葡萄果粒大小对果实品质的影响研究

摘要: 摘要:酿酒葡萄果实品质和葡萄酒质量与果粒大小密切相关。试验以云南香格里拉、宁夏玉泉营、山东烟台和新疆五家渠四个产区的酿酒葡萄霞多丽(Vitis vinifera L. cv. Chardonnay)为试材,将果粒大小分为大果粒(粒径>14?mm)、中果粒(粒径14-12?mm)和小果粒(粒径<12?mm)三个等级,分别测定各粒径范围果实分布比例,果皮鲜重、果粒重以及果实酸、糖、酚类物质等主要品质指标,并对果实品质进行主成分分析。结果表明:(1)‘霞多丽’在四个产区中果实多为中、小果粒,单果粒种子数及单粒种子质量均随粒径的增大而增加;可滴定酸含量均表现为大果粒中较高;(2)总酚和单宁含量除新疆五家渠表现为大果粒中较高外,其他三个产区均为小果粒含量较高;(3)黄酮醇类总量在宁夏玉泉营表现为小果粒较高,其他产区则为中等果粒含量较高;黄烷醇类总量在云南香格里拉和新疆五家渠表现为小果粒较高,宁夏玉泉营为中等果粒较高,山东烟台则为大果粒含量较高。结论:主成分分析可得出‘霞多丽’在宁夏玉泉营的小果粒综合品质得分最高,新疆五家渠的大果粒‘霞多丽’葡萄综合品质得分最低;山东烟台产区表现为大果粒得分较高,其他三个产区的综合品质得分都表现为小果粒>中等果粒>大果粒。

Abstract: Abstract: The quality of wine grape and wine are closely related to the size of berry. The experiment was conducted with the Vitis vinifera L. cv. ‘Chardonnay’ as test materials growed in four producing areas of Shangri-La in Yunnan, Yuquanying in Ningxia, Yantai in Shandong and Wujiaqu in Xinjiang, and the fruit size was divided into large fruit(> 14 mm), medium fruit (14-12 mm), and small fruit (<12 mm). The fruit size distribution, fresh weight of peel, tartaric acid, sugar, phenolic substances and other major quality indicators were detected, used principal component analysis of fruit quality. The results showed that: (1) Chardonnay was mostly medium and small fruit in the four producing areas. The number of single fruit seeds and single seed weight increased with the increase of berry size. The titratable acid content of Chardonnay showed higher in large fruit.(2) The content of total phenols and tannin was higher in the small fruit other three producing areas except that of Wujqu in Xinjiang in large fruit. (3) Flavonoids was higher in small fruits in Yuquanying of Ningxia, while that in other producing areas was higher in medium fruit. The total amount of flavanols was higher in small fruits in Shangrila and Wujiaqu, Ningxia Yuquanying showed a high level of medium fruit, while Yantai had a high content of large fruit. Conclusion: The principal component analysis showed that ‘Chardonnay’ had the highest comprehensive score of small fruit in Yuquanying of Ningxia, the lowest score of large fruit ‘Chardonnay’ in Wujiaqu, Xinjiang; the producing areas of Yantai in Shandong,large fruit had higher scores, the other three producing areas of the overall score showed small fruit> medium fruit> large fruit.
