果粒大小对美乐和蛇龙珠葡萄果实品质的影响

摘要: 果实粒径被普遍认为是影响果实品质的一项重要指标。试验以宁夏玉泉营产区的美乐和蛇龙珠葡萄为试验材料,将美乐果粒分为>14 mm(L)、14~12 mm(M)、<12 mm(S)三个粒径等级,蛇龙珠果粒分为>15mm(L1)、14 mm~15 mm(M1)、<14 mm(S1)三个等级,连续两年测定不同粒径葡萄的糖、酸、花色苷单体以及单体酚含量。试验结果表明:两个葡萄品种两年均表现为中等果粒比例较高;2014年美乐和蛇龙珠葡萄果实的可溶性固形物随粒径的增大而降低而2015年均表现为中等果粒中含量较高;连续两年葡萄的种/果质量比和单果粒种子数两年均随粒径的减小而减小;2014和2015年酚类物质含量在美乐中表现为小果粒和中等果粒较高,蛇龙珠则为大果粒和中等果粒较高;美乐中等果粒葡萄的花色苷单体总量最高,蛇龙珠果实的花色苷单体含量受年份影响较大;单体酚物质总量以及黄酮醇类物质总量在美乐葡萄表现为中等果粒中较高,蛇龙珠葡萄则表现为大果粒中较高。结论:中等果粒的美乐葡萄酚类物质较高,大果粒的蛇龙珠葡萄酚类物质较高。

Abstract: Abstract: Berry size is generally considered to be an important indicator of fruit quality. In this study, Merlot and Cabernet Gernischt were used as test materials to divide the fruit of Merlot into three sizes > 14 mm (L), 14~12 mm (M) and <12 mm (S), dividing Cabernet Gernischt to three sizes > 15mm (L1), 14mm~15mm (M1) and <14mm (S1) . The determination of sugar, acid, anthocyanin monomer and monomer phenol content of grape with different berry size for two consecutive years.The results showed that the ratio of medium fruit was higher in both grape varieties in two years. In 2014, the contents of Brix of Merlot and Cabernet Gernischt decreased, while in 2015 which showed that middle fruit was higher. The grape weight ratio and number of single grape decreased for two years with the decreasing of berry size in two consecutive years. The phenolic contents of Merlot in 2014 and 2015 were higher for small and middle fruit, while for large and middle fruit of Cabernet Gernischt; The total amount of anthocyanin monomer in Merlot medium grape is the highest, while for Cabernet Gernischt is more affected by the year. The total amount of monomeric phenolic compounds and the total amount of flavonols in the Merlot grape showed moderately high in medium size, while Cabernet Sauvignon showed the larger grape. Conclusion: The phenolic contents of Merlot were higher for middle fruit, in the Cabernet Gernischt grape of the large fruit are higher.
