摘要: 本文对近年来微生物挥发性有机化合物(microbial volatile organic compounds,MVOCs)在农产品中的分 析和应用的相关文献报道进行了回顾。对农产品中MVOCs的捕集、仪器检测、数据分析方法进行简介,着重论述 了MVOCs在农产品微生物污染检测、发酵食品品质监控、微生物资源开发利用等方面的应用情况。

Abstract: This review outlines the analytic methods for the determination of microbial volatile organic compounds (MVOCs) and their applications in agricultural products. The methods used for MVOCs capture, instrumental detection and data analysis are summarized. The focus of this review is on the applications of MVOCs in the detection of microbial contaminants in agricultural products, the quality control of fermented foods and the exploration and utilization of microbial resources.
