两种饲养方式下苏尼特羊肉的氧化稳定性研究

Effects of Two Feeding Patterns on Oxidation stability of Sunit Sheep Meat

摘要: 以舍饲、放牧两种饲养方式下的12 月龄苏尼特羊股二头肌为实验材料,分别测定脂质氧化产物、硫代巴比妥酸(Thiobarbituric acid, TBA)、抗氧化能力、抗氧化酶以及相关调控基因表达量等指标并进行比较分析。结果表明:放牧条件下苏尼特羊肉TBA值显著低于舍饲(P<0.001);羊肉中主要的脂质氧化产物为己醛、庚醛、壬醛、1-辛烯-3-醇以及2,3-辛二酮,其含量均在放牧羊肉中较低(P<0.05),表明舍饲羊肉的脂质氧化程度比较严重。抗氧化性能中,放牧苏尼特羊肉的总抗氧化能力(T-AOC,P<0.01)和降铜离子还原能力(CUPRAC,P<0.05)显著高于舍饲;抗氧化酶活性中,放牧羊肉的SOD(P<0.001)、CAT(P<0.05)和GPx(P<0.05)均显著高于舍饲,放牧羊肉中的抗氧化能力较高,能有效抑制脂质氧化。进一步通过相关调控基因的表达量得出,舍饲羊中LOX基因显著高于放牧(P<0.001),而SOD(P<0.001)、CAT(P<0.05)和GPx(P<0.05)基因表达量均显著低于放牧,进一步通过分子水平验证了放牧的抗氧化能力较舍饲的好。

Abstract: The objective of this study was to investigate the difference in lipid oxidation, thiobarbituric acid (TBA), enzyme, antioxidant ability and related genes of biceps muscles muscles from Sunit sheep subjected to feeding patterns (grazed and concentrated). The results showed that TBA of grazed sunit sheep were significantly lower than concentrated (P<0.001). Hexanal, heptanal, nonanal, 1-octen-3-ol and 2,3-octanedione may be mainly responsible for the formation of meat lipid oxidation, which contents were lower in grazed sheep (P<0.05). It indicated that the concentrated sheep meat have deeply the lipid oxidation degree. As to the antioxidant properties, total antioxidant capacity (T-AOC, P<0.01) and cupric reducing antioxidant capacity (CUPRAC, P<0.05) of grazed sheep were significantly higher than concentrated. Meanwhile, superoxide dismutase (SOD, P<0.001), catalase (CAT, P<0.05) and glutathione peroxidase (GPx, P<0.05) of grazed sheep were significantly higher than concentrated. which could effectively inhibit lipid oxidation. Furthermore, the expression of related genes showed that SOD (P<0.001), CAT (P<0.05) and GPx (P<0.05) were significantly higher in grazed sheep than concentrated, while LOX was significantly lower in grazed (P<0.001), and further confirmed by molecular level that the antioxidant capacity of grazed sheep was better than concentrated.
