近冰温冷藏对金冠苹果贮藏品质的影响

摘要: 本文以金冠苹果为试材,研究了近冰温冷藏对果实贮藏品质和抗氧化能力的影响。确定了金冠苹果的近冰点贮藏温度为(-1.7±0.2)℃。与0℃贮藏相比,近冰温贮藏可以显著(p<0.05)抑制苹果果实的呼吸强度和乙烯释放速率,推迟呼吸高峰出现时间,保持果实表面色泽,保持较高的可溶性固形物、可滴定酸、总酚、总黄酮含量和抗氧化能力,减缓丙二醛的积累和细胞膜透性的增加。这些结果表明,近冰温贮藏可以提高金冠苹果的贮藏品质,是一种有效的贮藏保鲜方法,为近冰温贮藏技术在苹果贮藏保鲜的应用提供参考依据。

Abstract: To investigate the effects of near freezing temperature storage (NFT) on ‘Golden Delicious’ apple fruit, postharvest quality attributes and antioxidant activity were studied. The results showed that NFT was set to be (-1.7±0.2) ℃. Compared with 0℃ storage, near freezing temperature storage delayed the fruit senescence of apple fruit by suppressed the ethylene production and respiration rate and maintained higher soluble solids and titratable acid contents. Compared with 0℃storage, ascorbic acid, total phenols, total flavonoids were observed to maintain a relatively high level and maintained higher antioxidant capacity. NFT retarded the increase of membrane permeability and MDA content. Based on the results above, near freezing temperature storage should be recommended for improving storage quality and antioxidant capacity of ‘Golden Delicious’ apple.
