明胶-壳聚糖抗菌膜中啤酒花提取物的释放研究

Release behavior of hop extract from gelatin-chitosan antibacterial films

摘要: 制备以啤酒花提取物为抗菌剂的明胶-壳聚糖抗菌膜,研究抗菌剂在食品模拟液中的释放行为。分别探讨了啤酒花浸膏、α-酸和β-酸在不同的释放环境温度下在10%、50%和95%乙醇溶液中的释放量的影响。结果表明:抗菌剂的释放量随着时间的延长和温度的升高而逐渐增大,直至达到平衡。在不同食品模拟液中,食品模拟液的含水量越高,抗菌剂的释放量越小。在相同条件下,啤酒花浸膏的释放最为缓慢,且释放平衡时释放量最小。通过拟合Peleg模型,相关系数R2均>0.98,说明拟合具有一定的可靠性, Peleg模型可以预测啤酒花浸膏、α-酸和β-酸的释放行为。

Abstract: The gelatin-chitosan antibacterial film with hop extract as antibacterial agent was prepared to study the release behavior of antibacterial agent in food simulant. The effects of hop extract, α-acid and β-acid on the release of 10%, 50% and 95% ethanol aqueous solutions at different release ambient temperatures were investigated. The results showed that the release amount of the antibacterial agent gradually increased with time and temperature, until equilibrium was reached. In different food simulant, the higher the water content of the food simulant, the smaller the release amount of the antibacterial agent. Under the same conditions, the release behavior of hop extract was the slowest, and the release was minimal when the balance was released. By fitting the Peleg model, the correlation coefficient R2 was >0.98, indicating that the fitting has certain reliability, and the Peleg model can better predict the release behavior of hop extract, α-acid and β-acid.
