Progress in Research on the Biosorption of Heavy Metals by Lactic Acid Bacteria: Influencing Factors, Mechanism and Application

Abstract: Heavy metals are one of the principal environmental pollutants. They are hard to transform in the environment and are easy to accumulate through the food chain, thus endangering human health. Heavy metals have been proven to be well absorbed by lactic acid bacteria. This article summarizes the factors influencing the adsorption of heavy metals by lactic acid bacteria (LAB) and the underlying mechanisms as well as the applications of heavy metal absorbing LAB strains in foods. We expect that this review will provide valuable information for further studies on the adsorption of heavy metals by lactic acid bacteria.
