Performance of Covalent Organic Framework and Its Application in Food Safety Detection: A Review

Abstract: Covalent organic frameworks (COFs) are an emerging porous organic material. Due to its excellent performance, high specific surface area, structural regularity, low density, functionalizability and high stability, COFs have been widely used in gas storage, catalysis, optoelectronics, separation and drug delivery. This paper mainly reviews the material properties of three major types of COFs: boron-containing COFs, striazine COFs and imine COFs, and their advantages and limitations in practical applications. It also summarizes recent progress in the application of COFs in the analysis of toxic and hazardous substances in foods, with a focus on the typical substances such as antibiotics, biotoxins, and additives, in order to provide a theoretical reference for promoting the application of COFs in new technologies for food safety detection.
