Advances in Research on Pollution Status and Toxicological Effects of Perchlorate in Food Matrices

Abstract: Perchlorate is a persistent pollutant that is widely found in foods and can competitively inhibit iodine uptake, thereby impairing thyroid function and affecting the growth and development of infants and young children. The body ingests perchlorate in different foods, and so it is of great importance to study the metabolism of perchlorate in the body. In this paper, recent progress in understanding the status of dietary exposure to perchlorate and its toxicity is reviewed.
