Abstract: The dextransucrase is a kind of glucosyltransferases that can catalyze the transfer of D-glucopyranosyl units by synthesizing sucrose to α-glucans or oligosaccharides. In this research, enzyme producing conditions for dextransucrase-producing organism were studied. The results showed that the optimum conditions of producing dextransucrase are as follows:most suitable carbon source 5% sucrose, cultivating time 24 h,cultivating temperature 25 ℃ and cultivating solution initial pH value 8.0。
