Nutrition Compositions Analysis and Evaluation of Wild Perca fluviatis of Ereqsi River

Abstract: Nutritional components of the muscle of wide Perca fluviatilis were tested and analyzed with routine methods in order to evaluate its nutritive value.Samples of 15 wild individuals were collected from the Ereqsi River,Xinjiang.The results showed that the contents of protein,fat and ash of the fresh muscles were 88.69%,4.69% and 6.62%,respectively.The composition of amino acids of muscle was found those to contain 18 common amino acids and 8 essential amino acids for human needs.In dry sample,the total content of amino acids was75.89%,the content of essential amino acids was 38.15%,the percentage of essential amino acids in total amino acids was 50.30%.The constitutional rate of the essential amino acids in general accorded with the FAO/WHO standard.The threonine is restrictional amino acids and the coefficient of amino acids ratio was 85.97.In dry sample,the content of four delicious amino acids was 29.40 %.The contents of EPA and DHA in fatty acids were 6.96% and 1.39%.
