Abstract: Proteomics is the large-scale study of proteins, particularly their structures and functions. Environmental stress is able to induce the expression of different proteins in lactic acid bacteria as response. Proteome studies is helpful to understand the molecular mechanisms of stress response of lactic acid bacteria in order to adapt to or resist the stress.
