Determination of 36 Artificial Pigments in Foods by Ultra High Performance Liquid Chromatography and Time-of-Fight Mass Spectrometry

Abstract: An ultra high performance liquid chromatography and time-of-flight mass spectrometry (UPLC-TOF-MS) method for the determination of 36 artificial pigments in foods was established. Samples were extracted with hot water and purified with polyamide powder, and the extract was separated on C18 column (1.8 μm) using methanol-5 mmol/L ammonium acetate as the mobile phrase through gradient elution and analyzed by UPLC-TOF-MS coupled with electrospray ionization (ESI) resource in a negative ion mode. An excellent linear relationship for pigments was observed in the concentration range of 0.01–1 μg/mL and the detection limit was 0.0072–0.94 mg/kg. The recovery rate of spiked samples was in the range of 80%–106% with relative standard deviation of 1.8%–9.7%.
