Structure, Biosynthesis and Application of Exopolysaccharides by Lactic Acid Bacteria

Abstract: Exopolysaccharides (EPS) are secreted outside cell wall of producing microorganism. Because of unique rheological properties and molecular structure, these polymers are widely used in foods as a stabilizer, thickener and emulsifier. In this article, chemical structure, biosynthesis and application of exopolysaccharide produced in bacteria have been reviewed, and new advances in exopolysaccharides produced by lactic acid bacteria (LAB) were discussed. Moreover, the results provide a new theoretical basis for increasing exopolysaccharide production of LAB.
