Abstract: In this study, an orthogonal array design involving 9 experiments of 3 variables at 4 levels was applied to optimize the extraction of crude polysaccharides from banana peels. Polysaccharides bpp1, bpp2 and bpp3 were obtained from the crude extract by DEAE-cellulose ion-exchange chromatography. Molecular weight determination of bpp1 was performed by HPLC. The optimum conditions for extracting polysaccharides from banana peels were found to be extraction at pH 8 and 85 ℃ for 5 h. The yield of crude polysaccharides under the optimized conditions was 2.75%. The molecular weight of bpp1 was measured to be 442068 u.
