Abstract: Abstract: Developed the cumulative exposure estimate of Sulfonamide residues in chickens for chicken meat quality safety supervision to provide technical supportment . By using the general steps of the food safety risk assessment:hazard identification、 hazard characterization, exposure assessment, risk characterization to conduct risk assessment of Sulfonamide residues in chickens. The assessment of results use food safety index.The theoretical intakes for residents of all ages were lower than theoretical permitted value and food safety index is less than 1.Residues in chickens do not harm to consumers’ health.Didn’t use to the risk management procedure.
