Abstract: The sustained-release microcapsules were prepared with spray-dried and freeze-dried method when the β-cyclodextrin, maltodextrin, octenylsuccinate starch sodium, casein were used as wall material and vanilla essential oil was used as the core material. They were evaluated to analyze the effects of four kinds of wall materials according to the microcapsules yield, encapsulation rate, solubility, release, emulsion stability. The results showed that the vanilla oil microcapsules with SVA as wall material had good punching, solubility and emulsifying properties. They showed yield rate of 84.17%, the embedding rate of 78.04%, the solubility and stability of emulsion of 96.31% and 97.82% respectively. The yield and the embedding rate of maltodextrin and β-cyclodextrin were lower with 71.37% and 61.18%, respectively. The microcapsules prepared by SVA showed the smallest particle size of 190 nm. The SEM showed that the surface of JY-SVA was smooth and spherical. Under the condition of 60 ℃ and 10 days storage, JY-SVA remained 54.62% of vanillin retention, which showed that the sustained-release effect of JY-SVA was higher than the other three kinds of microcapsules. Compared with other three kinds of microcapsules products, SVA is the best wall material of vanilla oil microcapsules based on all the indicators.
