Study on the monosaccharide compositions, physico-properties and preparation technology of soluble dietary fiber from coconut flour

Abstract: Response surface methodology was employed to optimize the process parameters of enzyme-assisted alkaline extraction of soluble dietary fiber(SDF)from coconut flour. The adequacy of the model equation for predicting the optimum response values was verified effectively by the validation. Effects of mixed enzyme solution content,alkaline content and extraction time on yield of SDF were investigated. Maximum yield of SDF from the mathematical model was predicted to be 11.99% dry basis under the condition of mixed enzyme solution content 0.5% for an extraction duration of 50min,alkaline 5% for an extraction duration of 40min. The water holding capacity, swelling capacity and oil holding capacity of SDF from coconut flour were 3.8g/g,3.1ml/g and 5.2g/g respectively. Infrared spectrum analysis,found that in the association state of hydrogen bond in coconut flour SDF more;HPLC results indicated that 9 kinds of monosaccharide were included in the SDF, which the contents of mannose, galactose,galactosamine and gum sugar respectively,The monosaccharide content above was 537.21mg/l,39.48mg/l,40.38mg/land 15.83mg/l, respectively.
