Abstract: In this experiment, 15 toxic alkaloids were determined in food based on the method of high performanceliquid chromatography-tandem mass spectrometry. Food samples were extracted by ethanol/water solutions (2+8,v/v), the extract was centrifuged and separated by high performance liquid chromatography, finally determined by mass spectrometry. The external standard method was used for quantification. Extraction conditions, purification method and chromatography-mass spectrometry parameters were studied and optimized, the limits of detection of 15 alkaloids were in range of 4-20μg/kg and the limits of quantification (LOQ) were in range of 10-80μg/kg, the recoveries of the method were in range of 80.9%-119.8% with spiked level of LOQ, 3LOQ and 5LOQ, relative standard deviations were lower than 10%, which conformed to the requirements of the analysis method. This method could be used to the rapid screening and quantitative analysis of 15 toxin alkaloids in plant source drinks, cereal grains products, fruits and vegetables samples.
