Abstract: Sea cucumbers were rich in polysaccharides, which account for more than 6% of the weight of dried sea cucumbers. Sea cucumber polysaccharide had a variety of biological activities such as anti-tumor, anti-coagulation, anti-oxidation and anti-parkinson. It had broad application prospects in dietary supplement and drug development. The structure characteristics of sea cucumber polysaccharide, such as molecular weight, sulfation patterns and sulfate group content, had great influence on its biological activity. So it is important to study the structure of sea cucumber polysaccharide to reveal its biological activity and mechanism. In this paper, the structural characteristics of sea cucumber polysaccharides were introduced. Moreover, the biological activities and their mechanisms of sea cucumber polysaccharides were reviewed, and the effects of its structure on biological activity were also summarized. Finally, the prospects of sea cucumber polysaccharide development were prospected. It can provide a theoretical support for their future deep processing and application.
